Make your family baking event colourful with this mint green cake pan, Guglhupf-shaped.
Recipe for green Guglhupf with spinach & mascarpone creme (by zungenzirkus.de):
Ingrediens batter:
- 200g of frozen spinach
- 250 ml sunflower oil
- 100g of white chocolate
- 3 eggs
- 180g of sugar
- 250 g of flour
- 1 package of baking powder
- 1 lemon, juice and zest
Ingredients mascarpone cream:
- 250 g of mascarpone
- 200 ml of cream
- 2 spoons of sugar
- 1 package of cream stiffener
furthermore 200g of apricot jam
Preparation of Guglhupf batter:
First, defrost the frozen spinach. Then squeeze out any excess water and purée it in a blender together with the lemon juice and lemon zest.
Grease mint green pan (approx. 2 liters capacity) thoroughly. Preheat the oven to 155°C convection / 175°C top and bottom heat.
Break the white chocolate into pieces and melt in a double boiler.
Mix the flour and baking powder in a bowl.
In another bowl, beat the eggs and sugar with a hand mixer for a few minutes until thick and creamy, then stir in the oil.
Alternately stir the flour-baking powder mixture and spinach purée into the egg-sugar mixture.
Now fold in the melted chocolate and pour the batter into the prepared cake pan.
Bake for about 1 hour. Test with a skewer before removing from the oven.
Remove the cake pan from the oven and let it rest on a cooling rack for a few minutes. Then turn it out onto the rack and let it cool completely.
Preparation of mascarpone cream:
First whip the cream with cream stiffener until stiff.
Briefly stir the mascarpone with the sugar until smooth, then carefully fold in the whipped cream.
Finish your green Guglhupf:
First, cut the Gugelhupf horizontally twice.
If desired, remove some of the mascarpone cream for decorative dots and refrigerate.
Place the bottom cake ring on a cake plate and spread with half of the mascarpone cream.
Spread half of the jam on top and place the middle cake ring on top.
Spread more cream and jam on top and place the last cake ring on top.
Finally, use a piping bag to pipe the remaining cream onto the Gugelhupf cake.
Dust with powdered sugar as desired.
Chill the Gugelhupf cake before serving.
